Recipe 2) From Owner – Ahayah Yashiya

West Indian – (Guyanese Style) Paratha (oil) Roti

Ingredients:

2 lbs plain or all purpose flour
2 tsp baking powder
1 tbsp oil or ghee

Instructions:

Mix the above ingredients with enough water to make a soft and pliable dough.

Divide dough into 15 small balls. (loys)

Roll out each ball into a flat circle.

Oil liberally and sprinkle with dry flour evenly over surface,
Fold by bringing together the flat dough into a smaller ball and tuck it.

Let dough relax for about half to 1 hour.

Heat griddle or tawa.
When hot, roll out rotis round and thin then cook turning over and oiling both sides.

Cook evenly.

When bubbles begin to show, roti is done.

Take off and clap well.

Serve hot or cold.

PS. Whole wheat flour can be added in equal proportions for roti with more fiber.
